Hilly grounds of the Val de Brun Estate. Vineyards of clone R3, famously the most typical and representative for Sauvignon, with the characteristic scent of pepper and tomato leaf.
Vineyards of 5000/6000 strains per hectare with an average age of 10-15 years.
Average production of 1/1.5 kg per strain of 70/80 q.li per hectare.
Breeding system: Sylvoz.
Technology
The harvest takes place manually towards the beginning of September followed by the soft pressing of the grapes, in a hyper-reductive environment, the static decanting of the must and its primary fermentation takes place at 18 degrees C with selected yeasts. The new wine is kept on the noble scum for a few weeks and after filtration and tartar stability we proceed to bottling. Stop in the bottle for a few months.
ORGANOLELEIC FEATURES
Color: straw yellow with greenish reflections.
Smell: aromatic, delicate, with a memory of pepper and exotic fruit.
Taste: dry, fresh without excess, elegant, velvety.

8 – 10 degrees C, uncorked at the moment.
The sale of alcohol to minors under the age of 18 is prohibited.
