Sauvignon DOC OBERKERSCHBAUM
In the glass, it is an intense yellow color with "young" greenish reflections. Aromas, especially of ripe citrus fruits, grapefruit and bergamot, mix with hints of flint and nettle. On the palate its flavors are enhanced, without losing finesse and acidity. A Sauvignon that convinces with elegant typicality and persistence.
This Sauvignon is a selection of a vineyard from our Oberkerschbaum estate in Pochi di Salorno. Thanks to the altitude that varies from 750 to 800 m.s.l.d.m, the particular microclimate and the ideal southern exposure of the vineyards, this estate is one of the great cru of the South Tyrolean Sauvignon.
Only the denomination "Vineyard"in South Tyrol guarantees the origin of a wine from a specific vineyard.

Clay, limestone gravel.
WINE
The bunches are slightly pressed and the must left in contact with the peel for a few hours to enhance its varietal characteristics. After a soft pressing and sedimentation of the must it ferments at a controlled temperature.
AGING
After fermentation, the Oberkerschbaum Sauvignon ages for 8 months on fine yeasts, which are gently and weekly moved (Battonage).
GASTRONOMIC COMBINATION
Perfect to be enjoyed in absolute solitude, it finds the most worthy combination in shellfish, in fish preparations of a certain structure, as well as with Asian cuisine.
The sale of alcohol to minors under the age of 18 is prohibited.
