In the 1920s, a student in Pisa, Mario Incisa della Rocchetta dreamed of creating a breed wine. His ideal, as for the aristocracy of the time, was Bordeaux.

This is how he describes it in a letter to Veronelli dated 11/6/1974.

"... the origin of the experiment dates back to the years between 1921 and 1925, when, student in Pisa and often a guest of the Dukes Salviati in Migliarino, I had drunk a wine produced from their vineyard on Mount Vecchiano which had the same unmistakable "Bouquet" of an old Bordeaux I just tasted more than drunk (because I was not allowed to drink wine at the age of 14) before 1915, at my grandfather Chigi's house. "

Having established himself with his wife Clarice in the San Guido estate on the Tyrrhenian coast, he experimented with some French vines (whose cuttings had recovered from the estate of the Dukes Salviati in Migliarino, and not from France) and concluded that Cabernet had "the bouquet I was looking for".

Nobody had ever thought of making a "Bordeaux" wine in Maremma, an area unknown from a wine point of view.

The decision to plant this variety on Tenuta San Guido was partly due to the similarity he had noticed between this area of ​​Tuscany and Graves, in Bordeaux. Graves means gravel, for the stony ground that distinguishes the area, just like Sassicaia, in Tuscany, calls an area with the same characteristics.

From 1948 to 1967, Sassicaia remained strictly private domain, and was drunk only on the estate.

Every year, few cases were put to age in the Castiglioncello cellar.

The Marquis soon realized that with aging the wine he improved considerably. As often happens with wines of great caliber, what were previously considered defects, over time became virtues.

Now friends and relatives encouraged Mario Incisa to deepen his experiments and perfect his revolutionary winemaking style for that area.

The 1968 vintage was the first to be put on the market, with a welcome worthy of a Bordeaux Premier Cru.

In the following years the cellar was moved to controlled temperature rooms, steel vats replaced the wooden vats for fermentation, and French barriques were introduced for aging

Land typology: The lands on which the vineyards suitable for the production of this wine insist are included in the territorial delimitation of the DOC SASSICAIA. They have different and composite morphological characteristics, characterized by a strong presence of limestone areas rich in galestro, as well as stones and stones (from which the wine takes its name) and partially clayey. The production plants are located at an altitude between 100 and 300 meters above sea level, with exposure to the West / South-West.

Vinification notes: Grapes selection through sorting table. Soft and delicate pressing and destemming of the grapes taking care not to break the peel of the grapes. Macerations were continued for about 13-15 for both Cabernet Franc and Cabernet Sauvignon. Pumping over and frequent délestages have favored aromatic extraction over tannic extraction. Malolactic fermentation in steel completed at the end of November.

Aging: At the end of the malolactic fermentation the wine was placed in French oak barriques, (for a third new wood and remainder, first and second passage) where it spent a 24-month aging period in compliance with the production regulations, always keeping separate the masses by vineyard origin. Assembly of the masses just before being destined for the preparatory bottling phases and subsequent refinement phase in glass before being sold.
