CLASSIFICATION: Carignano del Sulcis DOC Riserva.
ORIGIN: Vineyards grown with saplings that are still free from the foot (Latin vineyard), on the coast in the lower Sulcis.
SOIL COMPOSITION: Sandy and clayey soils, poor in organic substances.
GRAPES: 100% Carignano.
CLIMATE: Hot-arid in summer, temperate in winter.
HARVEST TIME: Manual harvest that begins in late September and ends in the first-second ten days of October.
WINE: Once de-stemmed and mashed, the grapes are fermented and macerated for 12-14 days in stainless steel tanks at a controlled temperature of around 25-28 ° C. During this period, frequent pumping over favors the passage through the must of the noble tannins with which the Carignano alberello is particularly endowed. Once the malolactic fermentation is over, the wine is transferred into small 1st and 2nd passage French oak barrels for 10-12 months, during which it undergoes an evolution in biochemical, chemical-physical and organoleptic terms . Subsequently the contact with the glass of some months allows an early development of the bouquet.
ORGANOLEPTIC CHARACTERISTICS: Color: deep ruby red almost impenetrable. Bouquet: intense fruity notes of blackberries, blueberries, vanilla, myrtle, leather and licorice. Taste: broad and velvety, with great structure and aromatic persistence, it is a full-bodied wine.
STORAGE: Constant temperature of 17 ° C, humidity of 75-80%, protected from light, horizontal bottle.
SERVICE: Large glass and medium-wide mouth, temperature 18 °.
GASTRONOMY: It goes well with red meat dishes, wild boar, roast suckling pig and well-seasoned Sardinian pecorino.
