Climate change

Summer begins early and already in mid-June the maturation has advanced almost to the invailing, it regularly proceeds the hot season without thunderstorms until September, when some rain does not compromise the good performance of the harvest. The PH is extraordinarily low and a great year is expected for aging wines.

Winemaking technique

15% of the grapes (Corvina) are left four weeks in withering. 20% of all grapes are freshly winered, 65% of the grapes arevinated and RIPASSATO on the not fully pressed skins of Amarone

Peel-must maceration 12-15 days at temperature between 20-26 C. Periodic replacements. Racking. Malolactic fermentation. Transfer to 350-litre, 500-litre, and 1500-litre French oak drums. Maturity period 12 months.

The sale of alcohol to minors under the age of 18 is prohibited.
