The grape is gently peeled and left in maceration for a short period of time.
It is then gently pressed and the musts obtained are clarified by decantation. The must is then fermented at a controlled temperature in stainless steel containers.
For fermentation, the wine is kept on yeast in stainless steel containers for six months. The
bottled wine is normally stored in thermo-conditioned rooms for about two months.
Colour: straw yellow with slight reflections of ancient gold.
Perfume: extremely refined, intense, harmonious and complex, with clear notes of melon and candied fruit; smells of jasmine, white fish, apricot, zagara, pear, banana, honey, mango and field flowers; slight final note of dry pastry and wet stone.
Taste: fresh, silky, long, of great balance, with a perfectly integrated mineral vein;
retroactive aromatic complexity of considerable impact and persistence.
Particularly suitable for fish dishes, mollusc starters, risotto and vegetable moulds.
