The winemaking:
Maurizio Zanella is obtained by vinifying separately the Cabernet Sauvignon, Merlot and Cabernet Franc grapes of the best vineyards of Ca'del Bosco. The grapes, harvested by hand in small boxes, are quickly classified and cooled. Each cluster is selected by experienced eyes and hands before being transported over the maceration pot. With the chopping, the berries fall into the vat, from above, for gravity. This avoids the use of traditional pumping systems, which would bring unwanted herbal notes. In the 2007 harvest, alcoholic fermentation and maceration were carried out for 22-day periods, carefully managing the temperature and the follicles. The refurbishments were carried out daily using a pair of lifting tanks in which the wine, drawn from the bottom of the barrel, is transferred by gravity. The wine, brought up from the flying tanks, is poured into the pot, with high flow, to submerge the "hat". Nothing more natural and effective to gently extract the color and tannins. When the wines are still hot, they are turned into small oak barrels, new for the 60%, made from selected wood, aged for at least three years. Only after the malolactic fermentation, in the middle of winter, the various batches are harvested and assembled. Maurizio Zanella, who continues to refine himself in wood for about twelve months, was born. The different batches are then assembled and the wine is bottled for gravity in a natural way. Thanks to innovative filling systems, the wine does not undergo oxidative shocks, precipitation and additional sulphites. Its integrity and health are guaranteed. Finally, each packaged bottle is clearly marked to ensure its traceability.
