In tribute to his vigour, to his softness and to the huge debt towards the ground at which it has origin, the Untilled rocky land owes his name to the hard blocks from blue clay, said ‘blocks’, which form on the surface of the vineyard.
VINIFICATION AND REFINEMENT
Seven different State lotteries have been vinified during the vintage. The bunches harvested to hand in cases 15 kg, they have been selected to hand on a double table of first choice and after the diraspatura and then subjected to a soft pressing. Each State lottery of the vineyard has been vinified separately. The fermentation has unwound in basins be of steel of which of wood, and some little State lotteries in barrique, it goes on at a soaking of 15-20 days to a temperature between 25 and 30 °C.
