PRODUCTION ZONA: Strong lands of iron clays coupled with an ancient geological chaos to sands of wind nature are home to the aristocratic Cabernet Sauvignon vine in the Sella & Moscow Estates.
40TH IN late autumn, sunny and breezy, the grapes are harvested after the attenuation of their initial herbaceous character.
VINIFICATION: The grapes harvested are disambolized, pressed and for 24 hours subjected to pre-fermentation maceration at the temperature of 15 degrees Celsius. The fermentation starts at 20 degrees C to follow in a thermal crescendo up to 28-30 degrees C and lasts about three weeks in order to carry out a decisive polyphenolic extraction necessary to cope with the long refinement. This is followed by a spontaneous malolactic evolution that takes place by autumn.
COLOR: ruby red.
PROFUMO: intense and persistent with pleasant notes of red fruits well harmonized with pleasant vanilla shades and first hints of spicy.
SAPORE: In mature wine, the vine reappears with warm, warm, warm, fine timbres in good harmony with the presence of Tron'ais oak, reminiscent of the long aging in small-capacity carats.
ALCOLIC TENORE: 13.0% vol.
ACIDO PATRIMONIO: 5.5 g/l.
AFFINATION: At the end of autumn, the wine enters the first ripening phase in the "carats" of Tron'ais oak, for a period of about 14 months, then it is placed in traditional barrels of greater ca-pacity for a further 12 months. After the bottle, there is a final period of refinement in dark cellars at a temperature of 16 degrees Celsius for at least another 18 months.
HOW TO SERVE: At a temperature of 16-18 degrees.
