Il Bianco "From Black to White" IGT
Historical nods: from an old strain of rondinella, during a routine check for vineyards in 1999, I come to discover some snowsliths with white-toed clusters. This intrigues me and from here begins the experiment to produce strains with perfectly white grapes. After a few years, in fact, this is achievable until you get a parcel of vineyard with clean material.
The current behavior differs from a "black" Rondinella in that it is a plant with leaves of lighter coloration lighter than medium vigour and with berries that depending on the insolation assume a coppery coloration typical of Pinot Grigio.
The other vines chosen: not surprisingly, therefore, complementary vines are also
derived from different mothers through intersections. The choice of the same is determined by a personal and subjective idea of balance as well as personality.

Area: Valpolicella Est Rese min/max/Ha: 60-80Q.li – Wine yield 55-60%
Vineyard and cellar operations: sprout selection, defolation, thinning of grapes
Harvest: second, third decade of September, in crates, pressing with diraspatura, cryomaceration with peels for a few hours, natural decanting 7/8 c , controlled fermentation for 15 days.
Description of the wine: soft greenish with reflections to yellow, of good structure
marked by the rotation in the glass, wide with very obvious aromas reminiscent of citrus fruits and perennial herbs such as mint, in the mouth is rich complex and of great persistence.
Pairing: fish in general, risotto with asparagus, soups, aperitif...
