Vinification: Cold pre-maceration with dry ice (3/4 days at temperatures below zero, then natural temperature rise). At a temperature of 15/16 degrees (about six/7 days after shaving) inoculation of the selected yeasts. Maceration on vines until the end of fermentation with temperature control (25/26 degrees). Remount every eight hours: guided malolactic fermentation.
Maturisation: in tonneaux (Allier-Stiria-Slavonia) 1/3 new, 1/3 second step, 1/3 third step for twelve months with reassembly and redistribution every six months. Bottling and refining in a bottle for twelve months.
Colour: red ruby on
Perfume: withered rose, ripe fruit, cassis, cooked plum, vanilla, cinnamon
Taste: dry, warm, velvety, fine and elegant, of body and long persistence.
Service temperature: 18-20-oC.
Gastronomy: red meat, game, seasoned cheese, grilled mushrooms
