TECHNOLOGY
The harvest and sorting of the grapes in small baskets takes place manually in September / October followed by the destemming. The crushing begins the short-term fermentation / maceration (6/8 days), and at a not very high temperature (23/25 ° C) but with more frequent pumping over so that a lot of color and a modest quantity of tannins are extracted from the skins, so as not to compromise the freshness characteristics of the future wine. The racking and completion of malolactic fermentation follows; after the first racking, the wine is stored in steel until bottling.
ORGANOLEPTIC CHARACTERISTICS
Color: intense ruby red with purple hues.
Smell: full, with fruity notes, tones of fresh grapes.
Taste: soft, excellent structure, with hints of blackberries and ripe blueberries.
