Son of the vineyard of the same name and a rigorous selection of the best grapes of our company. It stays in the cellar for 6 years.
Winemaking is traditional in our style but not before a strict selection that leads to the singularly discarding the not perfect berries. Cerretalto is produced only in vintages where the quality of the grapes is extreme. Complex and powerful but also able to maintain its unique finesse over the years. Extremely long-lived wine.

Vinification:
Selection table for bunches, space, berries selection table. Filling the fermentation vats by gravity. Fermentation without addition of yeasts and maceration in trunk vats - open conical at controlled temperature for 3/4 weeks. Raised in oak barrels for about 31 months and 30 months in the bottle.

Tasting notes:
Ruby red. Smells of red fruit, spices and a characteristic and unmistakable mineral vein. Great taste length and depth. Serve it at a temperature of 16 to 17 degrees by opening the bottle a few hours before, or gently decant it.

Pairings: It elevates the large meat dishes and mature cheeses but is satisfying even on its own with the people with whom you have pleasure to stay, to give themselves moments of authentic pleasure.
