Fermentation:
steel tank with peel maceration for 36-48 hours at controlled temperature until you get a must with 3 degrees of alcohol. Taking foam in autoclave for a few days. At the end, stabilization with refrigeration at -4 degrees C, microfiltration and subsequent bottling.
Maturation:
Refinement in the bottle for a few weeks.
Features:
Light ruby red color with purple highlights, vibrant foam and insistent perlage. Lush, fragrant and aromatic scent, net the hints of ripe red fruit and withered pink. Sweet, soft, delicate, sparkling, persuasive flavor, with long aromatic persistence. It accompanies strawberries, berries, as can harmonize even with dried fruits; nuts, hazelnuts, almonds, pistachios, figs. The most traditional pairing, with the dessert at the end of the meal or in mid-afternoon, is with dry pastry and baked cakes, from Christmas panettone to tarts. Braida Brachetto d'Acqui is perhaps the only wine in the world that, above all, goes well with chocolate.
