Barbera d'Alba DOC Scarrone
Vinification: from the single vineyard Scarrone single site in Castiglione Falletto (under the cellar) with 6,500 plants per hectare. Production per hectare of 30 hl. Pre-fermentative cold maceration. Alcohol fermentation for 16 days in open steel tine, with mechanical glazes, délestage and several reassembles. All at 26-28 degrees Celsius. After alcoholic fermentation, macerate with the skins for an additional 8 days and then transfer to barriques for malolactic.
Aging: 4 months between barriques and barrels. Bottled without filtration.
Description: ruby red color with intense aromas of ripe red and black cherries, vanilla and spices. Fresh acidity, rich tannins and full body. Barbera characterized by finesse, excellent balance, great complexity at persistent end.
Combinations: stews, seasoned pasta, poultry seasoned with rich sauces, game, roasted meat and strong cheeses
