The Amarone of Valpolicella of the Giuseppe Quintarelli Farm was born in Negrar, in the heart of the Valpolicella Classica, where the vineyards rest on hilly soils of volcanic and limestone nature. The grapes, carefully selected at the time of harvest, are brought to the fruit and immediately put to rest in wooden boxes and on the gratings; arranged in an appropriate way so that withering can take place in the best possible way and in a completely natural way. Wine capable as few to rise up and enjoy aging in the bottle.

Grapes: 55% Corvina and Corvinone, 30% Rondinella, 15% Cabernet, Nebbiolo, Croatina and Sangiovese.
Date of harvest: mid-September
Yield per hectare (grapes): 80 Q. of which 15% - 30% is selected to produce Recioto, Amarone or Red of Bepi
Color: red garish rather loaded
On the nose: with an intense aroma, a delicate scent of bitter almonds with cherry aftertaste.
In the mouth: powerful, warm harmonic, long-lasting, spicy, goudron. The grapes, carefully selected at the time of harvest, are brought to the fruit and immediately put to rest in wooden boxes and on the gratings.
Vinification: It is important to have the grapes at rest properly so that the withering can take place in the best and in a completely natural way. The first signs of noble mold appear at the end of November - early December and develop more in January. Towards the end of January the grapes are lazy and after about 20 days of maceration, the alcoholic fermentation by the indigenous yeasts begins. The fermentation takes place very slowly and lasts about 45 days. After that it is released and the future Amarone is put in small medium oak barrels, where it matures for seven years. During this period there are other alcoholic fermentations that allow to obtain a dry wine of extraordinary structure and complexity.
